- 2 red peppers
- 2 red onion
- 1 green zucchini
- 2 small yellow zucchini
- 1 bunch, asparagus
- 1/4 cup olive oil
- sea salt
- fresh herbs and garlic (optional)
Directions

1Wash and clean vegetables.Cut into even pieces.

2Toss them with a olive oil.

3Grill vegetables on the very hot grill for 3-4 minutes, do not overcook.

4When they are cooked spread them on a baking sheet to cool them faster.

5When cool, cut into small bite-size pieces.

6Grilled vegetables are delicious at room temperature, you can go and grill them 2-3 hours before serving.

7just before serving to add salt and fresh herbs and garlic if you are using. For fresh herbs, I like fresh rosemary, thyme and basil.
