Ingredients

  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 1/2 stick butter
  • 1 (10 oz.) can tomatoes and green chilies
  • 4 servings cooked rice
  • salt to taste
  • pepper to taste
  • 1 medium bell pepper, seeded and chopped
  • 2 (16 oz. each) cans red kidney beans, packed in chili sauce
  • 1 c. grated (4 oz. solid) American or Monterey Jack cheese

Directions

    In a Dutch oven or heavy casserole, saute bell peppers, onions and celery in butter until soft.

    Then add the tomatoes and beans; cook over low heat for 45 minutes, stirring now and then to avoid sticking.

    Finally, stir in the grated cheese, salt and pepper to taste.

    Cover and bake in a 300° oven for about 1 hour.

    Serve hot over cooked rice.
