Grits Casserole

Ingredients

  • 4 c. boiling water
  • 1 tsp. salt
  • 1 c. cooked grits
  • 1 roll garlic cheese
  • 1 stick butter
  • 2 eggs
  • 1 c. milk
  • 5 to 6 Ritz crackers

Directions

    Cook grits and salt in boiling water for 3 to 4 minutes, stirring constantly.

    Remove from heat.

    Cut 1 roll of garlic cheese and 1 stick of butter.

    Melt cheese and butter.

    Beat 2 eggs; heat slightly.

    Add cup of milk.

    Add all ingredients to grit mixture.

    Pour into baking dish.

    Crumble 5 or 6 Ritz crackers (or Cheddar cheese crackers) and cover the mixture with crumbs.

    Bake 45 minutes at 350°.

    Great with fish or tuna salad.
