- 1 (2 1/2 lb.) fryer chicken, cut up
- 3 Tbsp. cooking oil
- 1 lb. beef stew meat (cut up into 1-inch pieces)
- 2 medium onions, chopped
- 1 medium green pepper, chopped
- 1 (28 oz.) can tomatoes, cut up
- 1 tsp. salt
- 1 to 2 tsp. ground red pepper
- 3/4 c. peanut butter
- mashed sweet potatoes or hot cooked rice
Directions

1In a large saucepan brown chicken pieces in hot oil about 15 minutes; remove from pan.

2Set aside, reserving drippings.

3Add beef, onions and green pepper; cook until beef is brown and onions tender.

4Drain and stir in undrained tomatoes, salt and pepper. Bring to boiling; reduce heat.

5Cover and simmer 30 minutes.

6Add chicken; simmer 20 minutes.

7In small saucepan melt peanut butter over low heat.

8Stir into chicken mixture.

9Return mixture to boiling; reduce heat.

10Cover and simmer 20 minutes more.

11Skim off fat.

12Serve with mashed sweet potatoes or hot cooked rice.
