  • 1/4 cup finely chopped red onion
  • 1/4 teaspoon kosher salt
  • 2 ripe avocados, peeled and chopped (about 1 1/2 cups)
  • 1/2 cup chopped plum tomato (1 large)
  • 1 tablespoon fresh lime juice

    Place onion, salt, and avocado in a medium bowl; mash with back of a wooden spoon. Stir in tomato. Add lime juice, stirring until avocado just begins to lose its shape but is still very chunky.
