- 2 Tbsp. achote seeds
- 1/2 tsp. salt
- 2 Tbsp. cooking oil
- 1/2 c. chopped onions
- 2 c. water
- 2 c. rice
Directions

1Soak achote seeds in 1/2 cup of warm water for 30 minutes. Add salt.

2Rub or press achote seeds to get color.

3Strain liquid into small bowl.

4Saute onions in oil.

5Add rinsed rice to boiling achote-colored water.

6Reduce heat to medium-high for 5 minutes or until water evaporates.

7Reduce heat to low for 15 minutes. Yields 4 servings.
