Ingredients
- 4 to 5 lb. shrimp
- 1 lb. ham, cut in small pieces
- 1 1/2 green onions
- 1 1/2 c. celery
- 1/2 c. green peppers
- 1 c. onions
- 1 (6 oz.) tomato paste
- 1 clove garlic
- 3 or 4 bay leaves
- 1/2 c. parsley
- salt and pepper to taste
- 2 c. okra (more if desired)
- 1 lb. crabmeat
- 6 boiled crabs, cleaned and halved
- 1/2 lb. bacon, cut in small pieces
- 1 c. oil (if needed)
- 1 c. flour
- 6 qt. broth or water
- 1 lb. sausage (if desired), cut in quarter size pieces
- 2 doz. oysters (if desired)
Directions

1Fry bacon and ham together until well done.

2Remove the meat and add flour to the grease (add additional oil if needed).

3Cook to golden brown.

4Add green peppers, onions, green onions, celery, garlic, okra and sufficient liquid to wilt all vegetables.

5Cook about 10 minutes.

6Place all the cooked ingredients into a large pot and add additional liquid, bay leaves, parsley and tomato paste and cook about 15 to 20 minutes.

7Add sausage and cook for about 10 minutes.

8Add shrimp, crabs and crabmeat and simmer for 30 minutes.

9During this last 30 minutes, salt and pepper to taste and add oysters if desired.

10Makes approximately 2 gallons.
