- 1 chicken, cut up
- 1 Tbsp. oil
- 2 medium onions, chopped
- 2 Tbsp. flour
- 1 1/2 c. country ham, cut up
- 3 c. tomatoes, peeled and diced
- 2 c. chicken broth
- 1 c. raw rice
- 1 medium bell pepper, chopped
- 1/2 tsp. thyme
- 1 tsp. crushed red pepper
- 2 cans shrimp, drained
Directions

1Brown chicken in oil in large pot.

2Remove chicken and cook onions for 5 minutes.

3Add flour, stirring, until flour is browned.

4Add ham, chicken and tomatoes.

5Cover and simmer for 20 minutes.

6Add chicken broth, rice, green pepper and seasonings. Cover and cook for 20 minutes.

7Do not stir.

8Add shrimp and simmer until hot.
