Ingredients

  • 2 tbsp olive oil
  • 2 None chorizo sausages
  • 1 None onion, chopped
  • 2 sticks celery, chopped
  • 1 None green pepper, seeded and chopped
  • 4 cloves garlic, crushed
  • 11 oz sweet potatoes, peeled and chopped
  • 1 tsp cayenne pepper
  • 1/4 cup flour
  • 6 cups chicken stock
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup long-grain white rice
  • 2 None bay leaves
  • 1 2/3 lbs medium shrimp, peeled and deveined, tails intact
  • 1/3 cup chopped okra
  • None None Cilantro leaves, for garnish
  • None None Lime wedges, to serve

Directions

    Heat half the oil in a large saucepan on high heat. Cook the sausages for 2-3 mins, turning, until browned all over. Slice and set aside.

    Add remaining oil to pan. Saute onion, celery, pepper and garlic for 3-4 mins. Add sweet potatoes and cayenne. Cook for 1 min. Sprinkle with flour. Cook, stirring, until well browned.

    Gradually stir in stock until smooth. Add tomatoes, rice and bay leaves. Bring to a boil, stirring. Reduce heat to low; simmer for 15 mins.

    Return sausages to pan with shrimp and okra. Simmer for 4-5 mins, until shrimp are cooked through. Sprinkle with cilantro and serve with lime wedges.
