  • 1 onion (small, chopped, 1/2 cup)
  • 1 stalk celery (chopped, 1/2 cup)
  • 1/2 green bell pepper (cored, seeded, and chopped, 1/2 cup)
  • 1/4 cup fresh parsley (chopped)
  • 43 1/2 ozs chicken broth (1.5 tomato cans)
  • 28 ozs crushed tomatoes
  • 11 ozs frozen okra
  • 3/4 lb spicy sausage (or Italian sweet, sliced)
  • 1/2 lb shrimp (peeled and deveined)
  • 1 lb chicken (rotisserie is awesome)
  • 1 tbsp olive oil
  • 2 tbsps all-purpose flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tbsp dried thyme
  • 1 bay leaf
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp old bay seasoning (or Creole)
  • 1 tsp worcestershire sauce
  • 4 scallions (finely chopped, 1/2 cup)
  • Couple of dashes of cayenne
