Gyro Pizza

- 3- 3/4 cups Bread Flour
- 2- 1/2 teaspoons Active Dry Yeast
- 3/4 teaspoons Salt
- 3/4 teaspoons Sugar
- 1-13 cup Room Temperature Water
- 1 cup Pizza Sauce
- 2 cups Shredded Mozzarella Cheese
- 1/2 cups Feta Cheese, Crumbled
- 1 cup Cooked Gyro Meat, Chopped
- 1/2 cups Red Onion, Thinly Sliced
- 1 whole Medium Tomato, Chopped
- 4 Tablespoons Tzatziki Sauce, Drizzled
Directions

1Make the dough by adding the flour, yeast, salt, and sugar.

2Mix.

3Add the water, and with your wooden spoon or hands, mix until blended.

4I use my KitchenAid for this process to keep everything in the bowl during the rising process.

5Mix for about 30 seconds.

6The dough should be a bit stiff.

7Cover the bowl with a towel, and let it sit at room temperature until the dough has doubled in volume, about 2 hours.

8You can do this ahead of time as well, and place in an oiled container, big enough to house the dough, and place in the refrigerator overnight.

9Preheat your oven to 475 degrees F and place your pizza stone or sheet pan in the oven to preheat.

10Once preheated, let the stone stay in the oven for about 10 minutes to get nice and hot.

11Once dough has risen, divide into 2 portions.

12Add some flour to a large pastry board, take one portion of the dough and form into a large enough piece to place onto your pizza stone.

13(Set the other portion aside for a later use.)

14Once the pizza stone is hot, carefully place the formed pizza dough onto the stone.

15Lay on the sauce and evenly spread it onto the pizza dough.

16Top with the mozzarella and feta cheese, and evenly distribute that.

17Top with the chopped gyro meat, and the sliced red onions.

18Place in the oven and cook for about 25 minutes or until the crust is nice and golden.

19Remove and let it sit on a a wire rack, if you have one, for about 5 minutes.

20Before serving, shower the pizza with the fresh, chopped tomatoes and drizzle on the tzatziki sauce.

21Slice and serve.

22This pizza is everything you want in a great gyro, but not as sloppy.

23You get that familiar bite of the gyro meat and the red onion, and then the fresh tomatoes and tzatziki sauce hit you and it becomes this rollercoaster ride of flavors.
