  • 1 lb chicken liver
  • 1 ounce smoked turkey bacon
  • 1 small shallot, finely chopped
  • 13 cup port wine or 13 cup cognac
  • 2 eggs
  • 14 teaspoon allspice, ground
  • 12 teaspoon salt
  • 14 teaspoon white pepper
  • 1 cup milk, boiling

Directions

    Blend everything except the milk in a food processor.

    Pour into bowl and add the milk.

    Bake in ramekins in bain marie for 1-1 1/2 hour at 300F convection until set as a loaf.
