- 1 haddock Finnan
- 1/2 pint milk
- 2 tablespoons flour
- 4 tablespoons cheese
- 2 eggs
- 2 tomatoes
- salt
- pepper
Directions

1Clean fish, simmer in salted water for 7 minutes.

2Remove fish, skin and flake flesh.

3Place tomatoes in boiling water till skin loosens, remove, skin.

4Place with fish in ovenproof fish.

5Blend flour with a little milk, add in rest of milk.

6Bring to a boil, stirring to keep mixture smooth, 3 minutes.

7Grate cheese, beat eggs, add to sauce.

8Heat until sauce thickens, don't boil.

9Pour over fish and tomatoes.
