- 2/3 cup flour
- 2/3 cup cornstarch
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 1 egg
- vegetable oil
- 1 cup ice water
- 2 pounds fish fillets cut in 1*1*1/2
- soy sauce optional
- lemon slices optional
Directions

1Combine flour, cornstarch, salt & pepper.

2Beat together egg, 1/4 cup oil & ice water; add egg mixture all at once to dry ingredients, beating with mixer.

3(Do not overmix.

4Batter will be lumpy.)

5Set bowl of batter inside larger bowl filled with ice water.

6Dip fish into batter; deep fry in oil heated to 375 for 3 minutes, or until golden brown.

7Drain well on paper towels; serve immediately.

8Serve with soy sauce & lemon slices.
