Halloumi Burger

Ingredients

  • 1-2 tbsp fresh rosemary needles
  • 1 tbsp sage leaves
  • 1-2 cloves garlic, sliced
  • 1 tbsp olive oil
  • 200 g halloumi cheese, cut into 4 portions
  • 4 None burger buns
  • 8 tsp basil pesto
  • 370 ml jar of roasted peppers
  • 75 g rocket

Directions

    To marinate the cheese: Mix together the herbs, garlic, olive oil and onion in a bowl. Add the cheese and toss to coat in the marinade

    Heat a nonstick frying pan, add the cheese and fry on both sides for 2-3 mins on a high heat, pouring in the marinade just before removing the cheese from the pan. Set the cheese aside.

    Cut the burger buns in half and spread both sides with pesto. Layer with peppers, cheese, arugula, and onions and serve immediately.
