Ingredients

  • 3 cups brown rice
  • 2 cups pinto beans, cooked (or any bean)
  • 1 cup salsa
  • 2 ounces low-fat cheese
  • 1 tablespoon olive oil

Directions

    Saute and partly mash beans in hot oil.

    Add rice, cook until desired doneness, adding salsa and seasonings such as cumin, jalapenos, hot sauce, etc, to taste.

    A dollop of sour cream improves this tremendously, but be warned, it will cause your halo to tilt precariously!
