  • 3/4 c. biscuit mix
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/2 tsp. dried parsley flakes
  • 6 eggs
  • 1 c. diced ham
  • 1 (2 1/2 oz.) can mushrooms, drained
  • 2 green onions, sliced
  • 1 medium tomato, chopped
  • 3/4 c. shredded Swiss or Cheddar cheese

Directions

    Grease a square baking dish, 8 x 8 x 2-inch. Mix biscuit mix, milk, salt, mustard, parsley and eggs in the dish with a fork until batter is of uniform color. Stir in remaining ingredients. Bake uncovered until a knife inserted in center comes out clean, about 45 minutes in a 350° oven.
