- 6 medium red potatoes
- 1/2 lb. green beans
- 4 oz. thick-sliced ham or 1/4 pound cooked ham, in one piece
- 1 medium red pepper
- 1 medium onion
- 2 tbsp. salad oil
- 1 1/2 tsp. salt
- 1 tbsp. chopped parsley
Directions

1Cut potatoes into 1/2-inch cubes.

2Trim ends from green beans; cut into 1-inch pieces.

3In 3-quart saucepan over high heat, heat potatoes, green beans, and enough water to cover to boiling.

4Reduce heat to low; cover and simmer 2 minutes or until vegetables are almost tender.

5Drain.

6Meanwhile, dice ham.

7In nonstick 12-inch skillet over medium-high heat, cook ham until browned; remove to plate.

8Chop pepper and onion.

9In same skillet in hot salad oil, cook pepper and onion until lightly browned.

10Add potatoes, green beans, and salt and cook, stirring occasionally, until vegetables are tender and browned.

11Sprinkle with ham and parsley.
