- 1-1/2 tbsp. lard
- 5 potatoes, peeled and thinly sliced
- Salt and pepper
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 2 cups ham, cut in strips
- 6 eggs
- 1/2 cup cheddar cheese, grated
Directions

1Melt the lard in a large skillet.

2Spread half of the potato slices in skillet and sprinkle with salt and pepper to taste.

3Top with half the onion and green pepper, sprinkle with seasonings again.

4Arrange half of the meat on top, repeat layers.

5Cover and cook over low heat 20 minutes, or until potatoes are tender.

6Break eggs on top, cover and cook until eggs are done, about 5 minutes.

7Remove from heat, top with cheese and cover a minute or two until cheese starts to melt.
