- 4 large carrots
- 4 stalks celery
- 1 small onion
- 4 large potatoes
- 5 c. water or ham broth
- 2 to 3 c. diced ham
- 2 Tbsp. butter
- salt and pepper to taste
- 2 1/2 c. milk
- 6 Tbsp. flour
Directions

1Dice vegetables.

2In soup kettle, cook vegetables in water or ham broth until tender, about 20 minutes.

3Add ham, butter, salt and pepper.

4Blend flour into milk.

5Stir into soup.

6Heat, stirring constantly, until mixture boils.

7Turn heat to low and allow to simmer, partially covered, 10 to 20 minutes.

8Garnish with paprika and chopped parsley.
