  • 6 hard-boiled eggs
  • 1/3 c. minced or ground cooked smoked ham
  • 1/3 c. mayonnaise
  • 1 1/2 tsp. grated onion
  • 1 tsp. prepared mustard
  • 1/2 tsp. horseradish (optional)
  • salt and pepper to taste
  • 12 thin gherkin pickle slices

Directions

    Cut eggs in half, remove and mash yolks.

    Stir in ham, mayonnaise, onion, mustard, horseradish, salt and pepper.

    Spoon yolk mixture into egg white cavities.

    Top each with pickle slice. Makes 12 appetizers or 6 salad servings.
