- 6 hard-boiled eggs
- 1/3 c. minced or ground cooked smoked ham
- 1/3 c. mayonnaise
- 1 1/2 tsp. grated onion
- 1 tsp. prepared mustard
- 1/2 tsp. horseradish (optional)
- salt and pepper to taste
- 12 thin gherkin pickle slices
Directions

1Cut eggs in half, remove and mash yolks.

2Stir in ham, mayonnaise, onion, mustard, horseradish, salt and pepper.

3Spoon yolk mixture into egg white cavities.

4Top each with pickle slice. Makes 12 appetizers or 6 salad servings.
