- 3 Tbsp. butter
- 4 Tbsp. flour
- 1/4 tsp. salt
- dash of pepper
- 1 tsp. grated onion
- 1 tsp. dry mustard
- 1 c. milk
- 4 eggs, separated
- 1 c. ham, ground
Directions

1Melt butter in saucepan.

2Blend in flour, salt, pepper, onion and mustard.

3Stir in milk and cook, stirring constantly, until very thick.

4Beat egg yolks until thick and lemon-colored.

5Fold a little sauce into egg yolks and then add this to remaining sauce. Fold in ham.

6Whip egg whites until stiff, but not dry.

7Fold ham mixture into egg whites.

8Place in greased 1 1/2-quart casserole dish.

9Bake at 325° for 1 hour, until top is brown and puffy. Yields 4 servings.
