Ingredients

  • 4 slices pineapple
  • 4 maraschino cherries
  • 3/4 c. brown sugar
  • 1 tsp. dry mustard
  • 1/4 c. vinegar
  • 1/2 c. pineapple juice
  • 1 1/2 lb. ground ham
  • 1 lb. fresh ground pork
  • 1 c. cracker crumbs
  • 2 eggs
  • 1 c. milk
  • 3/4 tsp. salt

Directions

    Blend together the brown sugar, mustard, vinegar and pineapple juice.

    Mix the ham, pork, crumbs, eggs, milk and salt together. Place pineapple and cherries in bottom of pan.

    Place meat on top of pineapple; shape into ham.

    Pour sauce over loaf; bake, covered, for 3/4 hour.

    Remove cover and finish baking.

    Drain off sauce and invert on platter.

    Bake for 1 1/2 hours at 350°.

    Small oblong roaster works best.
