Ingredients

  • 1 1/2 lb. smoked ham, ground
  • 1 lb. lean pork, ground
  • 2 c. soft bread crumbs
  • 1 c. milk
  • 1 egg, slightly beaten
  • salt and pepper
  • 1/4 c. oleo, melted
  • 1/2 c. brown sugar (not packed)
  • 1 (8 oz.) can pineapple slices, drained (reserve juice)

Directions

    Mix ground meats, bread crumbs, milk, egg, salt and pepper. Combine oleo and brown sugar and pour into baking dish or large loaf pan.

    Place pineapple slices on top of sugar mixture.

    Mold ham mixture on top of pineapple and drizzle pineapple juice over the loaf.

    Bake at 350° for about 1 1/2 hours or until done, basting occasionally with pan juices.
