Ham Rolls With Orange Rice

  • 1 1/3 c. orange juice
  • 2/3 c. raw rice
  • 2 (11 oz.) cans mandarin oranges, drained and chopped
  • 2/3 c. mayonnaise
  • 1/4 c. chopped pecans
  • 4 Tbsp. chopped parsley
  • 2 Tbsp. green onions, chopped (tops and bottoms)
  • 16 thin slices ham
  • 1/2 c. orange marmalade
  • 2 Tbsp. lemon juice
  • 1/2 tsp. ginger

Directions

    Bring orange juice to a boil.

    Lower heat and add rice.

    Cook, covered, for 20 to 30 minutes or until rice is tender.

    Combine chopped oranges with rice and mix with mayonnaise, pecans, parsley and onions.

    Spoon mixture onto ham slices and roll as tightly as possible.

    Place in greased baking dishes, seam side down.
