Ingredients
- 1 1/2 to 2 lb. potatoes, cooked and drained
- 3 Tbsp. margarine
- 1/2 c. chopped celery
- 2 c. half and half
- 1/4 c. finely minced fresh parsley
- 1/2 tsp. salt
- 1/8 freshly cracked pepper
- 1/4 to 1/2 c. grated Parmesan cheese
- 1/2 c. chopped onion
- 1 (14 1/2 oz.) can chicken broth
- 1 c. diced ham
Directions

1Cube potatoes and set aside.

2Saute onion and celery in margarine until tender.

3In blender, combine half the potatoes and the onion/celery mixture with 1/2 cup broth.

4Blend until smooth. Add remaining broth and blend.

5Pour into pan; add half and half, remaining potatoes, ham, parsley, salt and pepper.

6Bring just to boiling; simmer 10 minutes.

7Ladle into bowls and top with cheese. Serves 6.
