Ham-Vegetable Chowder

- 1/4 c. butter or margarine
- 4 Tbsp. flour
- 1 large onion, chopped
- 1 c. chopped celery
- 1 c. diced carrots
- 2 parsnips, peeled and diced (if desired)
- 2 c. potatoes, peeled and diced
- 2 c. ham, chopped or flaked
- 6 c. water or soup stock
- salt and pepper to taste
- chopped parsley
- Parmesan cheese
Directions

1Melt butter in large soup pot.

2Add onion and celery.

3Saute until tender.

4Add flour, mix well.

5Cook about 3 minutes.

6Add water or stock, other vegetables and ham.

7Season with salt and pepper.

8Bring to a boil.

9Reduce heat to a simmer.

10Stir occasionally, about 30 minutes or until vegetables are done.
