  • 3 (10 oz.) pkg. frozen leafy spinach
  • 1 lb. pork butt, cut into 2-inch cubes
  • 1 clove garlic, chopped fine
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 1 (30 oz.) can cooked yams, drained
  • 1/4 c. butter

Directions

    Place half of the spinach in the 9 x 13-inch pan.

    Mix pork with garlic and arrange on top of the spinach.

    Season with salt and pepper.

    Arrange remaining spinach over the pork pieces. Cover pan with foil and bake in 350° oven for 1 hour.

    Arrange yams on top and dot with butter.

    Continue baking 1 hour.

    Yields 8 servings.
