- 3 (10 oz.) pkg. frozen leafy spinach
- 1 lb. pork butt, cut into 2-inch cubes
- 1 clove garlic, chopped fine
- 2 tsp. salt
- 2 tsp. black pepper
- 1 (30 oz.) can cooked yams, drained
- 1/4 c. butter
Directions

1Place half of the spinach in the 9 x 13-inch pan.

2Mix pork with garlic and arrange on top of the spinach.

3Season with salt and pepper.

4Arrange remaining spinach over the pork pieces. Cover pan with foil and bake in 350° oven for 1 hour.

5Arrange yams on top and dot with butter.

6Continue baking 1 hour.

7Yields 8 servings.
