- 1- 1/2 pound Turkey Sausage
- 5 cloves Garlic
- 1-13 cup Dry White Wine, Divided
- 1 Tablespoon Ground Fennel
- 1 teaspoon Fresh Ground Pepper
- 1 teaspoon Crushed Pepper
- 2 Tablespoons Olive Oil
- 1 whole Carrot, Finely Chopped
- 1 whole Onion, Finely Diced
- 1 whole Celery Finely Chopped
- 1 can (14 Oz. Can) Crushed Tomatoes
- 1 can (14 Oz. Can) Small Diced Tomatoes
- Salt And Pepper
- 1 pound Linguine, Cooked
- 3 dashes Fresh Parmesan Cheese
Directions

1First you must marinate your sausage.

2Remove the casings from the sausages and put the sausage filling in a bowl.

3Add your garlic, 1/3 cup of wine, fennel, black pepper and crushed red pepper.

4Cover and refrigerate at least 4-5 hours (overnight is fine).

5In a large skillet, heat olive oil.

6Add sausage mixture and cook over high heat until lightly brown (no pink showing).

7Add your carrots, onions and celery, stirring frequently.

8Let this cook for 4-5 minutes.

9Add remaining 1 cup of wine and let this reduce by half.

10Add crushed tomatoes and diced tomatoes (with their juices) and salt and pepper.

11Let this cook down for at least 30 minutes.

12Serve over your cooked linguine (you want to keep 1/2 cup of your cooking liquid in the event your sauce gets too thick).

13Top with Parmesan cheese and a serve with a side of fresh bread.
