- 1 lb. can beets, sliced (save liquid)
- 1 Tbsp. cornstarch
- dash of pepper
- 1/4 c. vinegar
- 1 Tbsp. sugar
Directions

1Drain beets, reserving liquid.

2Add enough water to beet juice to make 2/3 cup liquid.

3Combine cornstarch and pepper in saucepan.

4Add liquid and vinegar.

5Stir until smooth.

6Cook, stirring constantly, until mixture thickens and boils.

7Boil 1 minute, stirring.

8Add sliced beets and sugar.

9Heat through.
