- 3/4 c. sugar
- 2 tsp. cornstarch
- 1/3 c. vinegar plus 1/3 c. water
- 4 c. cooked beets
- 3 Tbsp. butter
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions

1Slice or dice the beets; set aside.

2Combine sugar and cornstarch.

3Add vinegar and water and boil for 5 minutes.

4Add beets and simmer 1/2 hour.

5Add butter and season with salt and pepper.

6Serves 6 to 8 persons.
