  • 1 Tbsp. cornstarch
  • 1/3 c. sugar
  • 1/4 c. water or beet juice
  • 1/4 c. vinegar
  • 2 c. cooked beets (whole, sliced or quartered)
  • 1/2 tsp. salt

Directions

    Blend cornstarch and sugar. Stir in liquid, vinegar and salt. Bring to boil, stirring constantly. Add beets and simmer for 5 minutes.
