- 5 fresh, medium beets (about 1 1/4 lb.)
- 1 Tbsp. cornstarch
- 1 Tbsp. sugar
- 3/4 tsp. salt
- dash of pepper
- 2/3 c. water
- 1/4 c. vinegar
Directions

1Prepare and cook beets.

2Cut into slices.

3Mix cornstarch, sugar, salt and pepper in saucepan.

4Gradually stir in water and vinegar.

5Cook, stirring constantly, until mixture thickens and boils.

6Boil and stir 1 minute.

7Stir in beets; heat through. Makes 4 servings.
