Ingredients

  • 12 small beets, cooked and sliced
  • 1/4 tsp. salt
  • 1/2 c. sugar
  • 2 tsp. cornstarch
  • 1/2 c. mild vinegar
  • 2 Tbsp. butter

Directions

    Mix salt, sugar and cornstarch and add vinegar.

    Heat in the top of a double boiler over direct heat, stirring constantly. When mixture boils, place it over hot water and cook, stirring often for 5 minutes.

    Add beets, stir and cover.

    Let heat over hot water for at least 30 minutes.

    Add butter and serve.
