- 12 med. beets, cooked and drained
- 1 Tbsp. cornstarch
- 1/2 c. vinegar
- 2 Tbsp. butter or margarine
- 1/4 c. sugar
- 1/4 tsp. salt
- 1/4 c. grape jelly
- 1 tsp. slivered orange peel
Directions

1Remove the skins from beets; trim and dice.

2In saucepan combine sugar, cornstarch and salt.

3Blend in vinegar and jelly. Cook over moderate heat, stirring constantly until thickened and smooth.

4Add butter and beets.

5Simmer 10 minutes stirring occasionally.

6Garnish with orange peel.

7Serves 6.
