Ingredients: 4 c. diced fresh apples; 3 c. flour; 2 eggs; 2 tsp. soda; 1 tsp. cinnamon; 1 tsp. vanilla; 2 c. sugar; 1 c. cooking oil; 1 c. chopped walnuts; 1 tsp. salt; 1 tsp. nutmeg

3 c. flour
2 eggs
2 tsp. soda
1 tsp. cinnamon
1 tsp. vanilla
2 c. sugar
1 c. cooking oil
1 c. chopped walnuts
1 tsp. salt
1 tsp. nutmeg

Directions

Mix together apples and sugar; let stand 1 hour.

Sift together flour, soda and spices.

Beat eggs; add oil and vanilla. Add apple mixture.

Combine flour mixture with eggs.

Stir in walnuts.

Bake in a greased and floured angel food cake pan for 1 hour at 350° or until done.

Frost with plain white icing and top with a sprinkling of chopped nuts.
