- 2 1/2 cups flour
- 1 tablespoon baking powder, plus 2 teaspoons
- 1 1/2 teaspoons salt
- 1 teaspoon freshly ground white pepper
- 8 eggs, separated
- 4 cups milk
- 2 cups corn kernels (frozen or canned)
- 1 large red pepper, diced
- 4 scallions, diced
- 1 quart vegetable oil for deep frying
- Pepper jelly (optional)
Directions

1Place the flour, baking powder, salt and pepper in a large mixing bowl.

2Add the egg yolks and combine well.

3Add the milk and stir to form a smooth batter.

4Stir in the corn, diced pepper and scallions.

5Beat the egg whites to a soft peak and fold into the batter.

6In a deep frying pan or pot, heat the oil to 350 degrees.

7Using a teaspoon, take spoonfuls of the batter and drop into the hot oil.

8Fry until golden brown, about three minutes.

9Remove from the oil and drain on paper towels.

10Serve immediately, with pepper jelly if desired.
