Ingredients
- 1 c. thinly sliced carrots
- 1 3/4 c. water
- 1 c. apple juice
- 2 Tbsp. lemon juice
- 1 Tbsp. brown sugar
- 1/2 tsp. salt (optional)
- 1 c. uncooked brown rice
- 1/2 tsp. cinnamon
- 1/2 c. raisins
- 1/3 c. green onions, sliced
- 2 c. unpeeled, chopped apples
- 2 Tbsp. toasted sesame seed
Directions

1Cook carrots in water until crisp-tender, about 5 minutes. Add apple juice, lemon juice, brown sugar and salt.

2Bring to boil.

3Stir in brown rice, cinnamon and raisins.

4Reduce heat; cover and simmer until rice is tender and liquid is absorbed, about 45 minutes.

5Gently stir in green onions an apples.

6Heat through.

7Turn into serving dish.

8Top with sesame seed.

9Makes 6 servings.
