- 1 lb pork sausage
- 8 oz bacon rashers
- 4 large carrots
- 2 large onions
- 6 medium peeled potatoes
- 1 bunch fresh parsley and thyme
- 1 salt and pepper to taste
- 1 cold water or clear stock to cover
Directions

1place sausages,bacon ,roughly sliced carrot, quartered onions , parsley & thyme in a large pot or skillet

2cover with cold water or stock

3bring to boil and simmer for at least an hour

4potatoes can be added at the beginning of cooking or anytime when simmering.

5If added at the start they will act as a thickner for the coddle.

6Adding later and cook for the last 20 mins or until done.

7Add seasoning to taste

8serve with fresh irish brown soda bread
