Ingredients

  • 1 lb pork sausage
  • 8 oz bacon rashers
  • 4 large carrots
  • 2 large onions
  • 6 medium peeled potatoes
  • 1 bunch fresh parsley and thyme
  • 1 salt and pepper to taste
  • 1 cold water or clear stock to cover

Directions

    place sausages,bacon ,roughly sliced carrot, quartered onions , parsley & thyme in a large pot or skillet

    cover with cold water or stock
  3. 3
    bring to boil and simmer for at least an hour
  4. 4
    potatoes can be added at the beginning of cooking or anytime when simmering.
  5. 5
    If added at the start they will act as a thickner for the coddle.

    Adding later and cook for the last 20 mins or until done.

    Add seasoning to taste

    serve with fresh irish brown soda bread
