- 4 cups potatoes, peeled and cubed into 1/2-inch dice
- 1 onion, finely minced
- 2 pimientos, sliced into strips
- 12 lb American cheese, diced
- 12 teaspoon salt
- 2 tablespoons butter
- 2 tablespoons flour
- 12 teaspoon salt
- 2 cups milk
Directions

1For the white sauce: melt the butter in a small saucepan; stir in flour and salt until fully incorporated.

2Add milk and cook, stirring constantly, until thickened.

3Cook the potatoes, onion and pimiento in boiling salted water for five minutes (If you use canned pimientos, do not parboil with potatoes and onions).

4Drain very well; pour into buttered casserole.

5Stir cheese into white sauce and pour over potatoes.

6Bake at 350F for 45 minutes.
