- 4 slices bacon
- 2 c. shredded cooked potatoes
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 4 eggs
- 1/4 c. milk
- 1/2 tsp. salt
- dash of pepper
- 4 oz. sharp process cheese, shredded (about 1 c.)
Directions

1In a 10-inch skillet, cook bacon until crisp.

2Leave drippings in skillet; remove bacon and crumble.

3Mix potatoes, onion and green pepper; pat into skillet.

4Cook over low heat until underside is crisp and brown.

5Blend eggs, milk, salt and pepper; pour over potatoes.

6Top with cheese and bacon.

7Cover; cook over low heat.

8When egg is done, loosen omelet.

9Fold in half.
