Hash Brown Pork Bake

  • 2 c. sour cream
  • 1 can cream of chicken soup (undiluted)
  • 1 (32 oz.) frozen cubed hash browns, thawed
  • 2 c. cubed cooked pork
  • 1 lb. Velveeta cheese, cubed
  • 1/4 c. chopped onion
  • 2 c. crushed cornflakes
  • 1/2 c. margarine, melted
  • 1 c. shredded Mozzarella
  • 3 green pepper rings

Directions

    In a bowl, combine sour cream and soup. Stir in hash browns, pork, cheese and onion. Transfer to a greased 3-quart baking dish. Toss cornflake crumbs and margarine. Sprinkle over top. Bake, uncovered, at 350° for 50 minutes. Sprinkle with Mozzarella. Bake 10 minutes longer. Garnish with green pepper.
