- 3 medium potatoes
- 1 Tbsp grated onion
- 1/4 c melted butter
- salt and pepper

1Boil 3 medium potatoes; chill.

2Peel and shred to make 3 cups.

3Add 1 to 2 Tbsp grated onion, 1 Tsp salt and dash pepper. Melt 1/4 c butter in a 10-inch skillet.

4Put potatoes into a pan, leaving 1/2 inch space around edge.

5Brown about 9 minutes. Reduce heat

6if necessary.

7Cut with spatula to make 4 wedges; turn.

8Brown 7 minutes longer, till golden.
