- 1 clove garlic, minced
- 1/4 c. salad oil
- 2 lb. sliced zucchini squash
- 4 cut up tomatoes
- 1 chopped green pepper
- salt and pepper to taste
- minced parsley
Directions

1In skillet saute, onion and garlic in oil.

2Add zucchini squash, tomatoes, green pepper and salt and pepper to taste. Cook until tender.

3Sprinkle with minced parsley and Parmesan cheese before serving.
