  • 1 pound uncooked ground turkey breast
  • 1/2 pound uncooked ground lean beef
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 large green bell pepper, seeded, cored, and diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon ground cayenne pepper
  • 1 cup tomato sauce
  • 1/4 teaspoon ground cumin
  • 1/4 cup capers, drained
  • Freshly ground black pepper to taste
  • 2 cups cooked long-grain white rice
  • Baked Plantain

Directions

    In a large bowl, thoroughly mix ground turkey with lean ground beef; set aside.

    In a large skillet, heat oil over medium heat; saute onion until translucent.

    Add bell pepper, garlic, and cayenne pepper; simmer over medium heat for 3 to 5 minutes.

    Add meat; stir constantly; keep ground meat separated into small pieces.

    When meat is browned, add tomato sauce, cumin, and capers; lower heat and simmer for another 8 minutes; add pepper to taste.

    Serve each portion over 1/2 cup of cooked rice with Baked Plantain .
