Taco Lasagna

Ingredients

  • 2 lb. ground beef
  • 2 pkg. taco seasoning mix
  • 4 cloves garlic, crushed
  • 1/2 tsp. cayenne pepper
  • 1 1/2 c. water
  • 1 Tbsp. corn meal
  • 2 pkg. (10 to 12 each) corn tortillas (soft tortillas)
  • 1 jar salsa (24 oz.)
  • 1 (16 oz.) sour cream, mix with 1 Tbsp. chili powder
  • 3 c. shredded Monterey Jack cheese
  • 3 c. shredded Cheddar

    Cook beef, drain.

    Add taco seasoning, garlic, pepper and water.

    Simmer for 10 minutes.

    Set aside.

    Sprinkle corn meal in 13 x 9-inch pan or even a little larger.

    Place 6 shells in bottom overlapping and up sides some.

    Layer in order:

    1 cup salsa, 1/2 of meat mixture, 1 cup sour cream and 2 cups cheeses.

    Repeat stacking with shells.

    Place 6 tortillas and remaining salsa on top.

    Bake 40 minutes at 375°.

    Remove and add rest of cheese. Bake 10 minutes more.

    Let stand before serving.
