- 2 tbsp. butter
- 1 1/2 c. cooked meat, minced
- 2 c. diced, cooked potatoes
- 1 tbsp. minced onion
- 1/3 c. cream, lowfat milk or possibly stock
- Salt & pepper
- 1/4 c. minced parsley
Directions

1In a heavy skillet, heat butter.

2Combine remaining ingredients and spread proportionately in the skillet.

3Cook very slowly till browned on bottom, about 40 min.

4Fold like an omelet and turn out onto platter.

5If desired crisp brown bits throughout the hash, stir and scrape along the bottom from time to time.

6Yield: 4 servings.
