  • 2 tbsp. butter
  • 1 1/2 c. cooked meat, minced
  • 2 c. diced, cooked potatoes
  • 1 tbsp. minced onion
  • 1/3 c. cream, lowfat milk or possibly stock
  • Salt & pepper
  • 1/4 c. minced parsley

Directions

    In a heavy skillet, heat butter.

    Combine remaining ingredients and spread proportionately in the skillet.

    Cook very slowly till browned on bottom, about 40 min.

    Fold like an omelet and turn out onto platter.

    If desired crisp brown bits throughout the hash, stir and scrape along the bottom from time to time.

    Yield: 4 servings.
