Hash Stuffed Peppers

Ingredients

  • 6 medium size green peppers
  • 1 c. water
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 1/2 c. minced onion
  • 2 c. diced cooked corned beef
  • 1 c. diced cooked potatoes
  • 1/2 c. soft bread crumbs
  • 1 (8 oz.) can tomato sauce
  • 1 Tbsp. Worcestershire sauce

Directions

    Cut a thin slice from the stem of each green pepper; scoop out seeds.

    Bring water and salt to a boil in a large saucepan.

    Add peppers.

    Simmer, covered, for 5 minutes.

    Remove peppers and drain.

    Melt butter in a medium saucepan.

    Add onion and saute for 2 minutes.

    Stir in remaining ingredients.

    Spoon mixture into pepper shells.

    Place in a greased 10 x 6 x 1 1/2-inch baking pan. Bake uncovered in a preheated oven at 350° for about 30 minutes. Serves 6.
