  • 2 c. sugar
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 3 eggs, beaten
  • 1 1/2 c. canola oil
  • 2 medium bananas, diced
  • 8 oz. can crushed pineapple (undrained)
  • 1 1/2 c. walnuts, coarsely chopped

Directions

    Sift together the first 5 ingredients.

    Mix in beaten eggs and oil.

    Fold in bananas, pineapple and nuts until well mixed by hand.

    Grease and flour a 10-inch tube pan.

    Fold in batter.

    Bake at 350° for 1 hour and 15 minutes or until done.
