  • 1 (9-inch) baked and cooled pie shell
  • 1 box vanilla pudding mix (not instant)
  • 1 banana, sliced
  • 2 Tbsp. coconut
  • 1 Tbsp. chopped pecans
  • 1 tsp. pineapple extract
  • 1 c. well drained, crushed pineapple
  • 2 c. milk
  • Cool Whip

Directions

    Make pudding according to package directions and add 1 teaspoon pineapple extract.

    Cool and add pineapple; mix.

    Layer banana, coconut and nuts in bottom of pie shell.

    Pour pudding mixture over layers, top with Cool Whip and sprinkle with 2 tablespoons coconut and pecans.

    Chill and serve.
